Ping times -- is high latency but no jitter better than low latency with high jitter?

I have a question about ping times, latency, and jitter.

I believe I understand the concept of jitter. If I ping www.google.com, and get some results of 10ms and others of 100ms, my jitter is 90ms; right?

If that's true, here's the question I have:

Is it ever preferable to have a connection with higher latency but less jitter? For instance, would it ever be better to have a 100ms latency with zero jitter than it would be to have latency that fluctuates from 10ms to 100ms?

One possible application I could think of would be something like VoIP or videoconferencing, where (perhaps) you would prefer consistency, even if it means higher overall ping times.
