advice on WIFI networking for a restaurant

How I would do it is to use a setup like Aruba Network's IAP (instant AP) setup. The IAPs in the lineup form up a virtual controller setup where the first AP on the network is the master virtual controller. If that AP fails out, an election is done and another AP is promoted to be the master controller. In this setup, you have a uniform wireless network where roaming will not be an issue between APs, RF performance is vastly improved as the APs will regulate output power to prevent interfering with a neighboring AP, automated band steering to enhance wireless performance in noisy RF environments, and load sharing as each AP is monitored and a wireless client getting on the network would be associated with a less busy AP.

The IAP setup has support for a Guest network and also provides captive portal services.

What you will have to do is to pull an Ethernet cable to each location where you want to install an IAP. At the central network location or wiring closet, a PoE switch would need to be installed to support layer 2 connectivity between IAPs and to power them.
